Chocolate Peanut Butter Bars


Cookie Layer: 
1/2 cup butter, softened

1/2 cup sugar
1/2 cup brown sugar, firmly packed
1/2 teaspoon vanilla extract
1 large egg
1/2 cup peanut butter
1 cups old fashioned oats
1 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt

1/4 cup butter, softened
1/2 cup peanut butter

2 Tb milk
1 teaspoon vanilla
2 tablespoons cocoa powder
1 1/2 cups powdered sugar


1. Preheat oven to 350 degrees.

2. Cream butter and sugars together until smooth. Add vanilla, egg, and peanut butter and mix.

3. Add oats, flour, baking soda, and salt.

4. Spread mixture in a lightly greased 13×9 cake pan or half cookie sheet. Bake for 15 minutes. Allow to cool.

5. Mix frosting ingredients together until smooth. Spread over cookie and cut into squares.

Notes: If you double the recipe it’s enough to fill a regular size cookie sheet. I like using crunchy peanut butter for the cookie part (so it has some texture) and creamy for the frosting (so it’s smooth).
